Preheat your Big Green Egg grill. Set the EGG for direct cooking at 450°F/232°C.
Take the chicken breasts and pound them to an even thickness of about 1/4 inch.
Season both sides of the chicken breasts generously with salt and pepper.
Grab a chicken breast and place it on a cutting board. Arrange 2 slices of provolone cheese and 2 slices of ham on top of the chicken breast.
Carefully roll up the chicken breast tightly and secure it with toothpicks.
Repeat the previous step for the remaining chicken breasts.
Using a basting brush, lightly brush each chicken rollup with olive oil.
Place the rollups on the preheated grill and cook for about 6-8 minutes per side, or until the internal temperature reaches 165°F/73°C.
Once cooked, remove the rollups from the grill and let them rest for a few minutes.
After resting, carefully slice each rollup into 1-inch thick rounds.
Serve the delicious grilled chicken rollups with the zesty lemon herb sauce on the side. Enjoy the explosion of flavors with every bite!
In a small bowl, whisk together the freshly squeezed lemon juice, olive oil, chopped fresh parsley, chopped fresh basil, minced garlic, salt, and pepper.
Let the sauce sit for at least 10 minutes to allow the flavors to meld together.
Serve the zesty lemon herb sauce alongside the grilled chicken rollups.
Drizzle the sauce over the rollups or use it as a dip.
